Fresh, nutritional foods are much more than one of life’s greatest pleasures, although they are certainly that. The science of type 2 diabetes and cardiovascular disease, cancer and multiple sclerosis, increasingly reveals healthy eating to be a primary determinant of health and healing. Research is bringing new rigor to recommendations that we put more whole grains, nuts, seeds, fruits, and vegetables on our plates. Drawing on findings that healthy foods can reduce the cost and use of the medical system, some advocates are calling on insurers to cover a portion of their price.
